I'm a huge fan of Inuyasha, and I've also seen (and enjoyed) Trigun, some of Wolf's Rain, and I think those are the only ones I've seen so far that have already been listed... *peers around*
Anyway, I'll add to the list for the heck of it! (Just a few for now... I'll add more when I have more time):
Name of the anime: Rurouni Kenshin (Tsuikohen OVA, series, Seisohen OVA) (Also a manga, which is EXCELLENT)
Length: (Yes, I'm adding this because it can be confusing) 6 OVA episodes (4 Tsuikohen, before the series; 2 Seisohen, after the series), and 95 episodes in the actual series.
Genre: Action/Adventure, Samurai, historical, romance
Brief Summary: Heh, this will be interesting... (brief? Yeah, right!) From the top! Himura Shinta is a young boy whose parents died of cholera when he was young, so he ends up in a slave trade chain. A group of bandits attacks the slavers, and he is the only one that survives thanks to a wandering swordsman who goes by Hiko Seijuuro the 13th. Hiko takes in Shinta, renames him "Kenshin" (Sword-heart), and trains him in the deadly Hiten Mitsuruugi Ryu, a form of kenjutsu (swordsmanship). Years later, Kenshin breaks away from Hiko to join the Ishin Shishi (in comes the history), who are trying to overthrow the Bakufu / Shogunate (type of government where a Shogun rules). Kenshin becomes their shadow assassin. Then there's this whole bit with a woman... which I won't go into for the sake of spoiling stuff, but I will add that something BIG happens. During the later years of the war (known as the Bakumatsu), Kenshin emerges from the shadows and his reputation grows as Hitokiri Battousai, the cold-hearted assassin that everyone fears. After the war, Kenshin "disappears" for about 10 years until he shows up in the series as a quiet, kind wanderer... who bears a reverse-blade sword (sakabatou, not a killing sword) and a vow not to kill ever again. Throughout the series, Kenshin makes new friends, fends off enemies from his past, and saves Japan... over and over. I won't really go into it much more than that.
Warnings: Varies. For the OVA's (before and after the series), there's a lot of violence, blood, angsty, and romantic stuff, (little to no humor) which earns it an "R" rating. For the series, there's still violence and blood, but there's a lot more "anime-style" humor involved, and a few characters swear a lot... ^^;
What do you like about the anime: I'm a history buff, so I love the historical aspect it brings in on one of the most marked civil wars in Japan (well, it brought in the westerners...). I'm also a huge lover of action and swashbuckling, so it really drew me in on that sense as well. It also helps that Himura Kenshin is my favorite character ever-- he's very complex, incredibly deep, and a very interesting person to write on (even if he's not an actual historical figure =3 ). There are a lot of cute moments in the series, and also plenty of interesting topics touched upon throughout.

Length: 24 episodes
Genre: Action/Adventure, Samurai, historical, humor
Brief Summary of what the anime is about: Whereas Rurouni Kenshin (Tsuikohen OVA) is from the Ishin Shishi / rebel point of view in the Bakumatsu, PMK is from the Shinsengumi point of view. (The Shinsengumi were the band of swordsmen who "enforced" Shogunate law and fought for the Shogunate.) It brings in a variety of historical characters from the time period. Tetsunosuke is a 15-year-old who's dream is to join the Shinsengumi and become a powerful swordsman, rival to Shinsengumi's top swordsman, Okita Souji. When he signs up with the group, he's assigned as a page to one of the top officers in the group, and his brother (Tatsunosuke) becomes an accountant, much to Tetsu's chagrin. As the series progresses, Tetsu matures from the young, ambitious boy into a young man who better understands what it means to be strong.
Warnings: Violence, blood, language, cross-dressing, some hints of shounen-ai, loads of humor
Why do you like the anime: I love the nice balance between seriousness and humor in this series. The ending of the anime is a bit weak, but the manga's apparently still going... Anyway, I also love the historical aspect of it. It's incredibly well-drawn, and the characters are lovable. ;D
Name of the anime: Ranma 1/2 (also a manga)
Length: Not sure, I just got into the series... ^^;
Genre: Humor, Romance, action/adventure, Martial Arts, some "fantasy" (if you can call it that)
Brief Summary of what the anime is about: Hahahaha... This series is about a young man named Ranma, who goes to China with his father to train in martial arts. While there, both he and his father fall into these cursed springs which change their lives forever. Every time Ranma is splashed with cold water, he turns into a woman (hence the "1/2"...), which proves to be a rather interesting (and embarrassing) plot thread... (His father's curse turns him into a panda every time *he* gets nailed with cold water... hehe...). Anyway, Ranma's father and this other guy (can't remember his name! ><) have arranged that Ranma marry one of the guy's 3 daughters. It's settled that Ranma is engaged to the youngest, Akane, who has a quick temper and is very much a tomboy, but there's only one problem... The pair hate each other. ^^; Loads of humor, romance, and other *interesting* happenings... Will the couple grow closer, or be torn apart by the large list of suitors that both Akane and Ranma (as male AND female) have?
Warnings: Plenty of nudity... but nothing really distasteful, sexual humor (just look at the summary!), language, and some violence
Why do you like the anime: At first, I didn't really get what the big deal was about this show until I watched the first 5 episodes and started reading the manga. I'm now hooked... it's probably one of THE funniest series I've ever read/watched! I always end up on the verge of tears from laughing every time I see/read more!
